  1. In an extra large stock pot, make a roux by stirring flour and oil over medium-high heat until browned peanut butter color. Note: stir often and do not burn..
  2. When roux is made, add onions, bell peppers, celery, and garlic. Cook, stirring, until veggies are limp, being careful not to burn..
  3. Add hand squeezed tomatoes and juice, tomato sauce, salt, black pepper, and cayenne pepper. Cook until well blended..
